Street Food and Curries: Indian

Join Susan Gordon of Thunder Mountain Curry (a regular at The Troy Waterfront Farmer's Market and RPI) as you jump into the exciting world of Southeast Asian cuisine and traditional regional "street food." In this Indian cooking workshop, you'll begin with seasonal fruit chutney, create a simple chicken curry complemented by a vegetable curry, add flavored rice and a flat bread – by the end of the evening we will have a complete Indian meal cooked and ready to eat!

Step into the sunshine as Alane Hohenberg guides you through the eclectic offerings from the Troy Waterfront Farmer’s Market. You’ll be given insight into choosing the right foods, buying locally and in-season, and selecting what’s right, and what’s ripe! Upon making a few key selections, the tour will follow by a tasty summer recipe session in the kitchen at The Arts Center. Cooks of all levels welcome!


Street Food and Curries: Thai

Join Susan Gordon of Thunder Mountain Curry (a regular at The Troy Waterfront Farmer's Market and RPI) as you jump into the exciting world of Southeast Asian cuisine and traditional regional "street food." In this two-session workshop, you'll discover the secrets of Thai street food: dipping sauces, stir fried noodles, corn fritters, satay and a simple salad. The second class will cover various curries: red curry, green curry, and yellow curry – they all begin by blending spices into a paste add meat; cook up some black and white sticky rice with coconut cream sauce. Add a simple stir fry, and you'll think you flew to Bangkok!


La Fond de Cuisine: Stocks

Start at the base of so many French dinners! From chicken and beef stocks, to seafood and vegetable, you can make your own stocks, and taste difference compared to store-bought! You’ll learn the techniques in clarifying, making “raft” demiglace, and the delicious challenge known as beef bourguignon!


La Fond de Cuisine: Sauces

Discover the variety of possibilities in creating sauces, including emulsions (vinaigrette) hollandaise, red wine sauce for meats, beurre manié, and mirepoix. This class will also cover a comparative tasting of oils, including nut oils.

This mouthwatering workshop will take you through the steps of creating classic French pastries, including pâte à choux (a base dough, perfect for desserts), pâte brisée (a fruit tart with a variety of options), and pâte feuilletée (a versatile storebought dough, best for mushroom duxelles, blue cheese and cheese straws)

Join Brazilian American artist, Ellie Markovitch for a workshop that goes far beyond your average cooking class by transporting you to a kitchen in Brazil , for a true home-cooking experience, complete with recipe family secrets--the ultimate shared food experience! Students will cook together and eat a different meal at each session. Dishes being prepared will include Feijoada--the National dish of Brazil , Frango ao Molho, and Moqueca.
